Sprinkle a little cumin spice over some fresh cod loins and fry in a light oil. Try not to move the cod around too much in the pan so it keeps its shape.
Grab a pack of Curried Lentils and heat in the microwave as per instructions on the back of the pack.
In another pan, blanch some deep green leafy spinach and cover with a lid until wilted.
Strain your spinach and make a bed of leaves on a plate.
Once your cod is cooked properly, it’ll begin to flake. When it’s there, take it from the pan and plate on top of your lentils.
Spoon a generous dollop of natural yoghurt on the side for a cool creamy kick.
