A hearty meal option to leave you feeling Full of Goodness
500g sweet potatoes (peeled and cut into small chunks) 2 pouches of Full of Goodness Curried Lentils 100ml water 1 fresh lime Naan bread Red chilli (sliced) Fresh coriander Coconut yoghurt Chilli flakes
1. Preheat oven to 180c and line a baking tray with parchment paper. 2. Scatter the sweet potato chunks onto the tray, drizzle with oil and roast in the oven for 30 minutes. 3. Next, in a large saucepan over a medium heat, add a drizzle oil along with the pouches of Curried Lentils. 4. Add the sweet potato chunks and water and combine. 5. Simmer for approximately 8 minutes before serving. 6. Top with coconut yoghurt, sliced chilli, chilli flakes and fresh coriander. 7. Serve with naan bread, and lime wedges.
