Fill yourself full of goodness with this Rainbow Buddha Bowl of dreams!
600g sweet potatoes (cut into chunks) Oil of choice Pinch of salt 2 tablespoons of pesto 1 bag of lettuce 1/2 red cabbage (shredded) 2 avocados 2 carrots (shredded) 2 pouches of Full of Goodness Mediterranean Quinoa (cooked) Handful of pine nuts Chilli flakes (optional)
1. Preheat oven to 180c and line a baking tray. 2. Scatter the sweet potato chunks onto the tray, drizzle with oil of choice and season with a pinch of salt. 3. Place in oven to roast for 35-40 minutes. 4. Take the sweet potato chunks out of the oven and combine with the pesto. 5. Line your bowls with a bed of lettuce, and then top with the sweet potato chunks, shredded red cabbage and carrots, avocado and Full of Goodness Mediterranean Quinoa. 6. Garnish with pine nuts and chilli flakes. Enjoy!
