1. Sprinkle some dried oregano, salt and pepper over the raw chicken breasts, heat up a grill onto full whack and grill the chicken breasts until golden on the outside and completely white in the centre. The juices should run clear.
2. Preheat the Mediterranean Quinoa as per instructions on the back of pack and then place in a bowl. Add all the remaining salad ingredients to the bowl along with a good splash of olive oil.
3. To serve, slice the chicken diagonally and serve on top of the MQ Greek salad. Drizzle some more olive oil over the chicken and dig in.
