Heat the oven to 200°C/180°C fan/gas 6 and roast the veg as per the instructions on back of pack. Once cooked keep to the side.
For the falafel, empty the Full of Goodness Curried Lentils into a food processor. Add the garlic, onion, coriander and parsley and pulse until you have a rough paste. Add the flour, season and mix well.
Heat a large, non-stick frying pan over a medium heat and add a little oil. Use your hands to form the mixture into patties. Fry the patties for 2 minutes on each side until crisp. You can keep the cooked falafels warm in the oven whilst you fry the rest of the mixture.
In a bowl swirl 2 tsp of harissa paste through a couple of tbsp of yoghurt. Add more if you like a good kick.
To serve, wrap up the falafels with some of the roasted veg and a dollop or two of the harissa yoghurt and dive in!!
