High in protein, this dish is perfect as a post-sesh dinner or a hearty breakfast.
1 tbsp vegetable oil or sunflower oil2 small corn tortillas2 medium egg1 pack of Smoky Mexican Lentils Juice of ½ lime1 ripe avocado, sliced50g feta crumbledHot chilli sauce
Serves 2:1. Heat the oil in a frying pan over a high heat. Add the tortilla and fry for 1-2 mins on each side until crisping at the edges. Transfer to a plate.
2. Crack the egg into the pan and cook to your liking. Meanwhile, pre-heat the Smoky Lentils as per the cooking instructions on back of pack.
3. Spread the hot Smoky Lentils over the tortilla, top with the crispy fried egg, avocado, feta and chilli sauce. Squeeze over a little lime juice just before eating.
