Ingredients:
1 large cauliflower (cut into florets)
2 pouches of Full of Goodness Curried Lentils
1 block of firm tofu (cut into cubes)
1 can of coconut milk
1 teaspoon of ground cumin
1 teaspoon of ground turmeric
1/2 teaspoon of salt
To serve:
Lime wedges
Rice
Crushed nuts
Fresh coriander
Chilli flakes
Handful of roasted chickpeas on top (optional)
Serves 2:
1. Preheat oven to 180c and line a baking tray with parchment paper.
2. Add the cauliflower florets to the baking tray and drizzle with oil. Roast in oven for 30 minutes.
3. Next, in a large saucepan over a medium heat add the pouches of Curried Lentils, along with the coconut milk, tofu cubes, ground cumin, ground turmeric and salt.
4. Add the cauliflower and combine, before leaving to simmer for 10 minutes.
5. Serve with rice, and garnish with crushed nuts, fresh coriander, chilli flakes and a handful of roasted chickpeas if using.
6. Squeeze with some lime and enjoy!
